Becoming Semi-Vegetarian…
So far,
My journey on becoming semi-vegetarian has been great. Have I given up meat all together? Not yet. But in the last three days, I’ve successfully given up pork and beef. I had chicken and turkey on one occassion each. I believe that if I keep exercising my ability to make different choices, I can give up chicken and turkey too by the end of the week.
The hardest part of this journey is trying to make vegetarian choices when I cook for my non-vegetarian husband! He loves meat so I cook meat. To overcome this obstacle I’ve started buying a meat and fish options for dinner. If it’s a chicken dinner for him, it will be a tilapia dinner for me. Another obstacle is finding semi-vegetarian options at my favority restaurants. This past weekend, my husband and I went to Boston Market. Look what I ordered:
This was a delicious, lite yet filling dinner. It’s meals like this that excite me about this journey.
